Toddler and child friendly recipes have become essential for parents over the last few weeks. This toddler friendly banana muffin recipe is a variation on the now world-famous banana bread and is perfect for little ones. Honor is really getting in to her cooking and we had a lot of fun making these, using the bananas that Mackenzie has been preparing with in his special banana magic trick.
Ingredients:
-250g self raising flour
-1 teaspoon baking powder
-1/2 teaspoon bicarbonate of soda
-110g caster sugar
-75g melted butter
-1 teaspoon vanilla extract
-2 eggs
-2 large mashed bananas (the riper the better)
-125 ml buttermilk
-chopped pecans, walnuts or chocolate chips to decorate (optional)
Instructions:
Heat the oven to 190C (gas 5) and fill a muffin tin with paper cases. Sift the flour into a bowl and add the baking powder, bicarbonate of soda and sugar with a pinch of salt. In a separate bowl, mix the butter, vanilla, eggs, bananas and buttermilk.
Make a well in the centre of the flour bowl (the dry ingredients) and pour in the other mixture (the wet ingredients). Roughly mix together and scatter in any of your optional extras. Spoon the mixture into the muffin cases- Honor loved this bit- and top with more extras if wanted. Bake for 20-25 minutes until golden brown before cooling on a wire rack. Yum.
We enjoyed these in front of a weekend film and I had some leftover muffins for breakfast with yoghurt and berries. Delicious. Let me know if you try this toddler friendly banana muffin recipe or if there are any other recipes that Honor might enjoy!
