I’ve always had such a sweet tooth, and this DIY banana and chocolate chia cream pudding is what I’ve been absolutely craving lately. They are what banana cream pie dreams are made of – light, fluffy and oh so yummy. They’re so simple to make and super healthy! Chia seeds, bananas, granola, and dark chocolate make this treat perfect for all my sweet cravings. So, here’s to a healthy pudding that both my taste buds and my conscience love! A banana and chocolate chia cream pudding is perfect for weekday dinner parties or for cosy Fall weekends when you need to use up what’s in the pantry.

Ingredients:
(makes 3 servings)

For the chocolate chia pudding

-2 cups almond/coconut milk (or your favorite milk!)

-1/3 cup chia seeds
-1/4 cup cacao or cocoa powder
-2 tablespoons honey or maple syrup
-2 teaspoons vanilla extract
-1/2 teaspoon salt

Combine all the ingredients in a bowl, stirring well to combine. Cover and let sit in the fridge for at least four hours (preferably overnight).

For the coconut banana cream
-1 can full-fat canned coconut milk
-1/3 cup chia seeds
-2 tablespoons honey or maple syrup
-1/2 vanilla bean (seeds removed)

-2 ripe bananas, mashed
-2 ripe bananas, sliced

Combine the coconut milk, chia seeds honey, vanilla and a pinch of salt in a bowl. Cover and place in the fridge for 1 hour, stirring twice until thickened OR let sit in the fridge overnight until thickened and creamy.

Assembly

-Divide the chocolate pudding between 3-4 serving glasses

-Add a layer of mashed banana to each

-Top with a layer of the coconut cream

-Serve with the sliced banana, granola, dark chocolate and lavender sprigs

-Enjoy
